Bone Broth for Healing - January newsletter

 

Bone broth is very nourishing and healing!  Providing vitamins and minerals, supporting the immune system and improving digestion, allergies, teeth, joint and bone health.

Specific bone broth recipes can be used when treating specific conditions.  Chicken broth is particularly helpful when healing ulcerative colitis. The chicken feet, rich in collagen/gelatin are especially anti-inflammatory to the gut lining.

Using seaweeds, ie, kombu, wakame etc are very supportive for hypo-thyroid conditions. Even using “goitrogenic” foods, such as Brussels sprouts, bok choy, broccoli, rutabaga, turnips, kohlrabi, radishes, cauliflower, cabbage, kale, mustard greens, watercress, can provide many nutrients without stressing the thyroid. 

A vegetable broth can be especially restorative, easy to digest, onions/garlic, potatoes/sweet potatoes, celery, carrots/kohlrabi and their tops!

Add herbs the last 1/2 hour for tasty and incredibly nutritious broth.  Parsley, cilantro, fresh rosemary, marjoram, turmeric root, or ginger root. 

Recommended cooking times: vegetable/seaweed broths for 4 - 6 hours, chicken bone/feet for 24 - 48 hours and beef bones for 48 - 72 hours and discard all the cooked remains - saving the rich broth to use as stock.  This stock can now be used as a soup base, to poach eggs, or to cook grains.
